It’s currently Thanksgiving Eve, and I have been cooking for no less than six hours… so far.
Did I mention two weeks ago that we had firmly decided we were not doing ANYTHING for Thanksgiving?
But, when Mr. Cotten is in charge of plans… well they change. Rapidly. So when my husband nonchalantly told his step-mom and the rest of the family that of course WE would host Thanksgiving, he really meant ME. Lulz.
I’m kidding. I don’t mind, actually. I’m kind of kicking ass in the kitchen today (if you don’t believe me, which you shouldn’t, check my Insta Story). But, yeah. I kind of went from zero to turkey in a hurry.
Which brings me to this post, why my favorite Thanksgiving of the year has already happened.
Two words: margaritas & Chipotle.
When we decided to have Friendsgiving at Casa dela Roe this year, we pretty much immediately agreed on catering. Ain’t nobody got time to cook for another meal this week. Luckily, we have a mutual friend at Chipotle who hooked us up with enough food to feed an army (thanks again, Charles!).
We just supplied copious amounts of tequila. As you should for any holiday.
Everyone was happy. Even the babies. Pretty sure that’s a Thanksgiving miracle!
We couldn’t ask for better friends. So thankful to have a strong tribe of people who love our girls, and us!

And, back to cooking for me. In other news, I just made my mother’s famous rolls ALL BY MYSELF because I’m an adult.
